Salsa Fresca

Ingredients:

1 cup chopped tomato
1 cup chopped tomatillo (green Mexican tomato)
1 cup yellow onion
1 cup chopped scallions
1 cup chopped jalapeño peppers
1/2 cup cider vinegar
1/2 cup olive oil
1/2 cup lime juice
1/2 cup cilantro
1 teaspoon salt
1 teaspoon ground pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon cumin

Directions:

Combine all ingredients in a large bowl. Mix well. Place in a non-metallic jar and keep refrigerated up to 2 weeks. Serve with corn chips or empanadas or over rice and vegetables.
